The dish highlights the rich flavors of goat meat, complemented by fresh vegetables and spices. It reflects the region's culinary heritage, where goat is a staple protein, and is enjoyed with staples like rice or ugali. Chicken is a leaner alternative and more widely available.

Coconut oil adds flavor while canola oil is often less expensive.
Wash the goat meat thoroughly after purchasing from the butcher.
Place the washed goat meat in a boiling pan and add enough water to cover it.
Season the water with whole cumin seeds, black peppercorns, and cardamom pods.
Add cilantro stalks, chopped onions, crushed garlic, and chopped ginger to the pan.
Mix everything together and let it boil on low heat.
Once it boils, let it simmer on low heat for about an hour. If in a rush, use a pressure cooker for 30 minutes instead.
Strain the meat using a colander to separate the stock from the meat and spices.
Hand pick the meat to remove any whole spices like peppercorns.
In a nonstick pan, drizzle a little vegetable oil and add the pre-boiled meat, frying it on all sides until browned.
Add one cup of rice to a pot and pour in two cups of the flavorful stock, then boil it on the side.
Add a handful of golden raisins to the rice for sweetness.
In the nonstick pan, add chopped onions and a knob of butter, cooking until the onions are wilted and fragrant.
Add chopped carrots and bell peppers (red, yellow, and green) to the pan, along with any other vegetables of choice.
Mix stock with Breco (a curry mix) and a little dark soy sauce, then add this sauce to the vegetables.
Return the browned meat to the pan with the vegetables and drizzle a little more soy sauce for flavor.
Cook on low until the liquid thickens and the meat is well coated in the sauce.
Garnish with fresh coriander leaves before serving.
