Start by scrambling 4 eggs with salt to taste and set aside.
Heat some oil in a skillet.
Once the oil is hot, add the scrambled eggs and cook until done, then set aside.
Add more oil to the skillet and sauté minced garlic until fragrant.
Add chopped onion and continue sautéing for a few seconds.
Add the cooked rice to the aromatics and stir to combine.
Pour in soy sauce and mix well until distributed throughout the rice.
Add a little sesame oil for flavor, or substitute with olive or vegetable oil if preferred.
Stir in frozen diced carrots and combine well.
Add the scrambled eggs back into the rice mixture and mix thoroughly.
Season with salt and ground pepper to taste, mixing well to distribute.
Add chopped green onions and mix again.
Add a little sugar to balance the flavors, if desired, and mix well.
Transfer to a serving dish and serve hot.
