Clean the crablets thoroughly under cold water.
In a bowl, marinate crablets with soy sauce, garlic, onion, ginger, black pepper, and salt for 30 minutes.
Heat vegetable oil in a deep pan over medium heat until shimmering.
In a separate bowl, beat the egg and set aside.
Coat each marinated crablet in cornstarch, then dip in the beaten egg, and finally coat with bread crumbs.
Carefully place the coated crablets into the hot oil, frying in batches to avoid overcrowding.
Fry the crablets until golden brown and crispy, about 3-4 minutes per side.
Remove crablets from the oil and drain on paper towels.
Garnish with chopped green onions and chili peppers.
Serve with lemon wedges on the side.
