Mix 4 cloves of garlic finely.
Prepare 4 slices of ginger.
Take 2 green onions, split the stem part in half lengthwise, and cut them into 1-inch sections.
Rinse the shrimp with cold water and pat dry with paper towels.
Generously coat the shrimp with corn starch, ensuring they are completely coated and dry.
Prepare the sauce by mixing ketchup, soy sauce, dark soy sauce, salt, and sugar together.
Add oil to a hot pan over medium-high heat, enough to coat the bottom of the pan.
Add the shrimp to the pan and pan-fry until golden and crispy.
Flip the shrimp over to pan-fry the other side until golden.
Flip the shrimp again to crisp both sides more.
Remove the shrimp from the pan once both sides are golden and crispy.
Lower the heat to medium and add the ginger slices to the oil, letting them sizzle briefly.
Add the garlic to the pan and turn the heat down to low to prevent burning.
When the garlic is about to turn golden, add the ketchup sauce and stir-fry briefly.
Add rice wine to the sauce and mix together.
Add the shrimp back to the pan along with the green onions and quickly toss until evenly coated with the sauce.
