Baked Kelewele | Healthy Ghana Recipes

Ingredients
- ●4 ripe plantains
- ●2 tsp ginger, grated
- ●1 tsp cayenne pepper
- ●1 tsp salt
- ●1/2 tsp nutmeg
- ●1/2 tsp cinnamon
- ●2 tbsp vegetable oil
- ●1/4 cup water
Instructions
- 1Preheat your oven to 400°F (200°C).
- 2Peel the plantains and cut them into bite-sized cubes or slices.
- 3In a large bowl, combine the grated ginger, cayenne pepper, salt, nutmeg, and cinnamon.
- 4Add the plantain pieces to the bowl and toss them well to coat with the spice mixture.
- 5Drizzle the vegetable oil over the coated plantains and mix again to ensure even coverage.
- 6Spread the plantains in a single layer on a baking sheet lined with parchment paper.
- 7Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
- 8Remove from the oven and let them cool slightly before serving.
- 9Serve warm as a snack or side dish.

- ●1 small onion, finely chopped
- ●2 cloves garlic, minced
- ●1/4 cup fresh cilantro, chopped
- ●1 lime, juiced
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/2 tsp cumin
- ●1 jalapeño, seeded and minced (optional)
Instructions
- 1In a mixing bowl, combine the diced tomatoes, green bell pepper, and red bell pepper.
- 2Add the finely chopped onion and minced garlic to the bowl.
- 3Stir in the chopped cilantro and lime juice.
- 4Season the mixture with salt, black pepper, and cumin.
- 5If you like it spicy, add the minced jalapeño.
- 6Mix all the ingredients thoroughly until well combined.
- 7Taste and adjust seasoning if necessary.
- 8Let the salsa sit for at least 30 minutes to allow the flavors to meld.
- 9Serve with tortilla chips or as a topping for your favorite dishes.
