4 ripe plantains
2 tablespoons ginger
2 cloves garlic
1 teaspoon scotch bonnet pepper
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon nutmeg
1 cup vegetable oil
2 tablespoons lime juice
1 onion
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1 tablespoon sugar
1/4 cup water

Peel the skin off the ripe plantains.

Cut the plantains into two and then dice them into medium-sized pieces.

Blend ginger, garlic, alligator pepper, cloves, onion, African nutmeg, and pepper together with a little bit of water until smooth.

Scoop the blended mixture out with a spatula to ensure everything is properly blended.

Add the blended mixture to the diced plantains along with some salt and pepper.

Stir to combine, cover, and allow to marinate for about one hour.

Heat a lot of oil in a pan for deep frying.

Once the oil is heated, carefully add the marinated plantains to the oil without stirring immediately.

Allow the plantains to fry for a few minutes before gently stirring to avoid disintegration of the coating.

Fry on medium heat for about five minutes until the plantains turn golden brown.

Scoop out the fried plantains and remove any debris from the oil before continuing to fry more.
