4 cloves garlic
2 tablespoons ginger
1 teaspoon dried rosemary
1 teaspoon star anise
1 teaspoon coriander seed
1 medium onion
1 teaspoon salt

Peel the plantain and cut both edges.

Create some incisions on the plantain and remove the skin.

Cut the plantain into desired sizes, making them larger if they are a bit hard to avoid shrinking after frying.

Set the cut plantain aside.

In an asanka, add soaked dry chili pepper, garlic, ginger, dried rosemary, star anise, coriander seed, and onion.

Grind the ingredients until smooth and add salt to taste.

Combine the ground spicy ingredients with the cut plantain and add more salt to taste.

Cover the mixture with clean film and let it marinate for about 10 minutes.

Heat cooking oil in a deep frying pan until very hot, adding a little onion to flavor the oil.

Add the marinated plantain to the hot oil and fry on high heat until golden brown, adjusting heat if necessary.

Fry for about 10 to 15 minutes until the plantain is perfectly golden brown.

Remove the fried plantain and place it on a paper towel to absorb excess oil.
