1 teaspoon salt
1 cup vegetable oil

Peel the skin off the ripe plantains.

Place the ripe plantains on a chopping board and cut them into quarters.

Chop the plantains into tiny bite-size pieces.

Place garlic, ginger, onions, scotch bonnet pepper, and some water in a blender and blend on medium speed until a puree is formed.

Transfer the plantain pieces into a mixing bowl along with the blender puree.

Add freshly grated nutmeg, ground cloves, paprika powder, ground cinnamon, and salt to the mixing bowl.

Stir very well to combine, ensuring the plantain pieces are fully coated with the spice mix.

Heat oil in a pan on medium heat.

Gently transfer the plantain pieces into the hot oil and fry for 3 to 4 minutes or until fully browned, tossing the plantains around midway to help them brown evenly.
