4 ripe plantains
1 tablespoon ginger powder
1 teaspoon black pepper
1 scotch bonnet pepper
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon garlic powder
1/2 teaspoon anise seed
1 teaspoon onion powder
1 teaspoon salt
1 maggi cube
1/4 cup water
2 cups vegetable oil

Peel the plantains by cutting the tail and head, then cutting the skin.

Cut the peeled plantains into small pieces, medium or smaller size.

Add all dry ingredients to the plantains including the maggi cube and sprinkle with 2 tablespoons of water.

Mix the ingredients with a spoon or silicone spoon.

Cover the mixture and set it aside.

Heat the oil until very hot.

Divide the plantains into two batches for frying.

Scoop the first batch into the hot oil and leave it for about a minute before stirring.

Stir every 2 to 4 minutes until the plantains turn golden brown.

Remove the cooked plantains from the oil and strain the excess oil.

Fry the second batch in the same way as the first, ensuring the oil is hot and stirring every 2 to 4 minutes until golden brown.

Serve the fried plantains with roasted peanuts.
