Traditionally made with lamb or beef, the meat is marinated and cooked on a vertical rotisserie, allowing the flavors to meld beautifully. Served in pita or flatbread with fresh vegetables and yogurt, it has become popular worldwide, with variations found in many cultures, adapting to local tastes.

Canola oil is often less expensive and has a neutral flavor.
Start by marinating the beef mince. Use 500 grams of finely minced beef.
Add 1 teaspoon white pepper powder, 1 teaspoon black pepper powder, 1 teaspoon cumin powder, 0.5 teaspoon oregano (optional), 1 teaspoon red chili powder, and 1 teaspoon salt to the beef.
Add 1 teaspoon Kashmiri red chili powder, 0.5 tablespoon ginger-garlic paste, and 1 medium-sized chopped onion to the mixture.
Add 1 small chopped bell pepper and 1 tablespoon chili sauce.
Incorporate 4 tablespoons of thick yogurt (ensure the water is drained) and 1 tablespoon of ghee.
Add 1 tablespoon of corn flour for binding and mix well with hands or a chopper until smooth.
Cover and let the mixture marinate for at least 1 hour, preferably longer.
Prepare a butter paper and grease it lightly with oil.
Spread the marinated mixture on the butter paper in a rectangular shape.
Cover with another greased butter paper and flatten it out evenly with hands.
Remove the top butter paper and fold the mixture to form a kebab shape.
Heat a tava (griddle) and grease it with oil.
Place the kebabs on the tava, ensuring they are not touching each other.
Add 2 tomatoes and green chilies (optional) on the side.
Cover and cook on low flame for 14-15 minutes, flipping the kebabs halfway through if desired.
While the kebabs are cooking, prepare the sauce by mixing 0.5 cup thick yogurt and 0.5 cup mayonnaise in a bowl.
Add salt, 0.5 teaspoon garlic powder, and black pepper to the sauce and mix well until combined.
Prepare a salad with chopped cucumber, cabbage, and onion in a large bowl.
Add 1 teaspoon lemon juice, salt, and black pepper to the salad and mix well.
Check the kebabs after 15 minutes; they should be cooked and soft.
Remove the kebabs from the tava and lightly fry them in a bit of oil or butter for color and shine.
Serve the kebabs hot.
