Start by making muthiya: In a bowl, combine 1/2 cup coarse whole wheat flour, 1/4 cup besan, 1 teaspoon chili paste, a pinch of turmeric powder, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1 tablespoon oil, 1 tablespoon sugar (optional), and 1 teaspoon lemon juice. Mix well.

Add a little water to the mixture and knead for a minute to form a dough.

Shape the dough into round muthiya pieces.

Heat 2 1/2 teaspoons oil in a pan and fry the muthiya until they are golden brown and crunchy. Set aside.

For the main dish, in a bowl, combine 1/2 cup grated coconut, 1 tablespoon ginger-garlic-chili paste, 1 tablespoon peanuts, 1 tablespoon coriander powder, 1/2 teaspoon hing, and salt to taste. Mix well to form a masala.

Next, prepare the mixed vegetables: Use 1 1/4 cups of mixed vegetables including surti papdi and brinjal, and cut them into pieces.

In an Instant Pot, add the mixed vegetables and pour in 1/2 cup water. Add the prepared masala and mix everything together.

Seal the Instant Pot and set it to pressure cook for 6 minutes.

Once done, release the pressure and open the lid. Stir the mixture well and add the fried muthiya back into the pot, mixing to combine.

Serve hot with roti, puri, or paratha.
