1 Cup fresh Coriander leaves (Hara dhaniya)
3 tbs Green chillies paste (Hari mirch)
3 tbs Ginger & Garlic Paste
1/2 tsp Turmeric Powder (Haldi)
1/2 tsp Garam masala
1 tsp Red Chilli Powder (Lal Mirch Powder)
100 gms Fresh Garlic Chives (Hara lasan)

Prepare the Methi Muthiya by mixing chopped fenugreek, besan, ginger garlic paste, garlic chives, jaggery, sesame seeds, turmeric powder, red chili powder, salt, curd, garam masala, coriander powder, and soda.

Form the mixture into small dumplings and set aside.

Prepare the coconut mixture by combining grated coconut, fresh coriander leaves, green chilies paste, ginger and garlic paste, turmeric powder, garam masala, red chili powder, garlic chives, jaggery, and coriander powder.

Stuff the brinjals, potatoes, purple yam, and sweet potato with the coconut mixture.

In a large pot, heat peanut oil and add the stuffed vegetables along with the flat beans, pigeon pea, and green peas.

Cover the pot and cook until the vegetables are tender, stirring occasionally.
