1 tblsp Salt
2 tblsps Dry Grated Coconut
2 tblsps Sugar
1 tblsp Sesame Seeds
1/2 tsp Asafoetida
100 gram Green Garlic Leaves
45 gram Coriander leaves Finely Chopped
2 tblsps Oil
1/4 tsp Cooking Soda
500 gram Surti Papdi
1/2 cup Tuar Dana
1/2 cup Mutter
100 gram Sweet Potatoes
200 gram Potatoes
150 gram Purple Yam
5 small Brinjals
1 Raw unripe Banana
4-5 tblsps Oil for cooking
1 tsp Carrom Seeds
1/2 tsp Asafoetida
1/2 tsp Green Chilli Paste
1/2 tsp Garlic Paste
1/2 tsp Ginger Paste
16 -17 Methi Muthiyas
1 cup water
Coriander Leaves for garnishing
Remaining Green Garlic for garnishing

Prepare the masala mix by combining green garlic tops, fresh coconut slices, raw peanuts, coriander leaves, green chilli paste, ginger paste, dry garlic paste, turmeric powder, coriander and cumin seeds powder, garam masala powder, carrom seeds, salt, dry grated coconut, sugar, sesame seeds, and asafoetida in a bowl.

Stuff the masala into the brinjals and bananas.

In a pressure cooker, heat oil and add carrom seeds and asafoetida.

Add the stuffed brinjals, bananas, and other vegetables including Surti papdi, tuar dana, mutter, sweet potatoes, and purple yam.

Add the remaining ingredients including water and methi muthiyas, and pressure cook until done.
