Turkish Adana Style Kebab

Originating from the city of Adana in Turkey, Adana Kebab is a beloved dish known for its bold flavors and spicy kick. Traditionally made with minced lamb and a blend of spices, it reflects the region's rich culinary heritage. This dish is often enjoyed during gatherings and celebrations, served with fresh vegetables and flatbreads. Today, its popularity has spread beyond Turkey, with variations appearing in many countries, making it a favorite among kebab enthusiasts worldwide.

Take 500 grams of ground meat, which should be 70-80% fat and 20-30% lean.
Add 1 teaspoon salt and 1 teaspoon cumin powder to the meat.
Include 1 teaspoon garam masala, 1 teaspoon turmeric, and 1 teaspoon black pepper.
Add 1 tablespoon crushed coriander and 1 tablespoon pomegranate powder.
Include 1 tablespoon red chili powder and 1 to 1.5 tablespoons crushed green chili.
Add 1 tablespoon lemon juice and 1 to 1.5 tablespoons ginger garlic paste.
For binding, add 2 tablespoons all-purpose flour.
Chop one medium onion, squeeze out excess water, and add it to the mixture.
Mix all ingredients thoroughly by hand.
Cover and refrigerate the mixture for 1 hour.
Take a grill pan and spread the meat mixture evenly with your hands.
If the mixture sticks to your hands, wet your hands with water.
Cook on medium flame for 5 to 7 minutes on one side.
After 5 to 7 minutes, cut the kebabs into pieces using a spatula.
Add 2 tablespoons of oil to prevent sticking, if desired.
Cook for another 5 to 7 minutes until done.
Remove kebabs from the pan and add 2 tablespoons of oil to the same pan.
Add one chopped small onion and one chopped small bell pepper to the pan.
Add 6 to 7 sweet peppers, a pinch of salt, and a pinch of black pepper.
Stir-fry the vegetables on medium heat for 1-2 minutes, keeping them crunchy.
Serve the kebabs with the colorful vegetables.
