4 pounds tomatoes
5-6 cloves garlic
1 large onion
10-12 small mushrooms
2 teaspoons dried oregano
2 teaspoons kosher sea salt

Add 2 tablespoons of extra-virgin olive oil to a large pan and preheat it.

Chop 1 large onion and add it to the pan with a pinch of kosher sea salt. Let it simmer for 2-3 minutes until translucent.

Slice 5-6 cloves of garlic into thin slices and add to the pan. Cook for about 2 minutes, stirring to avoid burning.

Add 2 teaspoons of dried oregano and freshly ground black pepper (about 1/2 teaspoon) to the pan and mix well.

Increase the heat to medium-high and add 1/2 cup of Italian red wine. Cook until the wine is boiling and reduce the alcohol, stirring continuously for about 2.5 minutes.

Slice 10-12 small mushrooms into small cubes and add them to the pan. Cover and cook for a couple of minutes on medium heat.

Use a food processor to chop 4 pounds of tomatoes into small pieces, using the pulse function to avoid turning them into liquid.

Add 2 teaspoons of kosher sea salt to the chopped tomatoes and set aside.

After cooking the mushrooms for about 2 minutes, add 1 cup of chopped parsley to the pan and cook for another 2 minutes.

Add the chopped tomatoes to the pan and mix everything well together, leaving a small opening to let steam escape. Cook on medium heat for about 45 minutes, stirring occasionally.

After 45 minutes, check the sauce and let it simmer for an additional 7-8 minutes if needed, until the desired consistency is reached.
