1/4 cup (50 grams) sugar
1 teaspoon vanilla (paste, extract, or 1 split vanilla bean)
1/2 cup plus 3 tablespoons (150ml) full fat milk
1 1/2 cups (400ml) heavy cream
2 leaves gelatin (3-4 grams), softened
handful of strawberries
1-2 1/2 teaspoons sugar for macerating strawberries

In a medium saucepan, add the sugar, vanilla, milk, and heavy cream.

Warm over medium low heat until it's blood warm.

Soften 2 leaves of gelatin in cold water, then squeeze out the water and add the gelatin to the panna cotta off heat.

Whisk until the gelatin is dissolved.

Transfer the mixture to a measuring cup for easier pouring.

Grease 4-6 cups or ramekins with vegetable oil if unmoulding is desired.

Pour the mixture into the cups and chill for 4 hours or overnight.

Chop a handful of strawberries and add them to a bowl with a few spoons of sugar to macerate.

Taste the strawberries and adjust sugar as needed.

Macerate the strawberries for the same amount of time as the panna cotta.

To unmould the panna cotta, remove from the fridge for 10 minutes.

Dip the cup into a bowl of warm water for 3-4 seconds and dry off the cups.

Place a plate on top of the cup and flip to release the panna cotta.
