Mince 150gr of 65% cacao chocolate and place it in a bowl.

Pour 280ml of milk into a pot and add 40gr of sugar.

Add 300gr of whipping cream to the pot.

Turn on the gas stove and heat the milk mixture, stirring gently to prevent burning.

Bring the milk mixture to a boil (do not boil vigorously).
