Step 1: Gather the ingredients: 400 ml cream, 200 ml milk, 40 g sugar, a pinch of salt, 125 g dark chocolate chopped, and 3.5 gelatin sheets or 14 g gelatin powder. Also, prepare a saucepan, a whisk, a small bowl of cold water, and six lightly oiled molds.

Step 2: In a saucepan, combine the cream, milk, sugar, and salt. Heat the mixture until it starts to warm up but do not let it boil.

Step 3: As soon as the mixture starts to heat, add the chopped dark chocolate and turn off the heat. Whisk well until the chocolate is thoroughly combined and melted, then remove the pan from the heat.

Step 4: To melt the gelatin, place the gelatin sheets in a bowl of cold water and let them sit for about a minute until softened. Once softened, take the gelatin out of the water, give it a quick squeeze, and add it to the chocolate mixture. Whisk well to combine.

Step 5: Arrange the molds on a tray and pour the chocolate mixture into the molds, filling them almost to the top.

Step 6: Place the panna cotta in the fridge and leave to chill overnight.

Step 7: To serve, remove the panna cotta from the molds. Run a knife around the inside edge of each mold, then dip them in warm water to help release them. Serve with a generous helping of raspberry sauce.
