1 cup dried chickpeas
1/2 onion
2-3 cloves garlic
1 cup flat leaf Italian parsley
2 teaspoons cumin
2 teaspoons coriander
1 teaspoon kosher salt
cracked black pepper

Soak 1 cup of dried chickpeas in a big pot of water for 18 to 24 hours.

Rinse the soaked chickpeas and place them in a food processor.

Add 1/2 onion, 2-3 cloves of garlic, and 1 cup of flat leaf Italian parsley to the food processor.

Add 2 teaspoons of cumin, 2 teaspoons of coriander, 1 teaspoon of kosher salt, cracked black pepper, and cayenne pepper to the food processor.

Drizzle a little olive oil into the mixture to help bind it together.

Pulse the mixture in the food processor until it is ground up but not super fine.

Form the mixture into small balls using an ice cream scoop.

Place the balls in the air fryer, ensuring they have space between them.

Drizzle the balls with a little olive oil before air frying.

Air fry at 400°F for 15 minutes, monitoring towards the end to prevent burning.

While the falafel is cooking, prepare a tahini sauce in another food processor.
