230 grams dried chickpeas
1 bunch scallions
1 bunch cilantro
1 bunch parsley
1 bunch dill
1 bunch mint
1 bunch thai basil

1 clove garlic
60 ml lemon juice
60 ml tahini
120 ml olive oil
pickles
tomatoes
romaine lettuce
sumac

Soak 230 grams of dried chickpeas overnight in water.

Chop scallions and herbs into large chunks and lengths.

Combine soaked chickpeas, scallions, herbs, garlic, cumin, salt, and baking soda in a food processor until it forms a grainy mass.

Transfer falafel dough to a bowl and set aside.

Heat oil in a large dutch oven to 350-375 degrees Fahrenheit.

Use a disher to form falafel and drop into the hot oil.

Fry falafel until they float and are deep dark brown, about 3 minutes.

Remove falafel and sprinkle with kosher salt.

Make hummus by blending 1 can of drained chickpeas, garlic, lemon juice, tahini, and olive oil in a food processor until smooth.

Wrap pita in tin foil and bake in a 400 degree oven for 7 minutes.

Prepare sumac onions by mixing finely sliced onions with sumac, lemon juice, and salt.
