Nasi Goreng

3 Tbsp Kecap mani (sweet soy sauce)
2 Tbsps soy sauce
½ tsp ground pepper
70gm shallots finely chopped
4 cloves garlic minced
1 hot pepper finely chopped
½ tsp salt
1 ½ tsp shrimp paste
6 Tbsp oil (peanut oil recommended)
300 gm peeled raw shrimp
2 eggs
2 chicken thighs chopped small
100gm green bean cut into 1.5 cm chunks
6 cups of day-old rice (2 cups of raw rice cooked the day before)
1 green onion chopped
1 handful of cilantro chopped

make a sauce by combining 3 Tbsps kecap manis, 2 Tbsps soy sauce and ½ tsp pepper. Mix and set aside.

in a mortar combine 70gm of shallots finely chopped, 4 cloves of minced garlic, 1 hot pepper finely chopped and ½ tsp salt. Pound to a rough paste for about 5 minutes. Mix in 1 ½ tsp shrimp paste in and set aside.

in a wok heat 3 Tbsps of oil on high. Add the shrimp and cook for 30 seconds constantly moving. Set the shrimp aside and dispose of any liquid on the wok.

in the same wok heat another 3 Tbsps of oil on high and add the mixture from the mortar. cook for 3 minutes constantly moving.

add 2 eggs and cook for 30 seconds constantly moving.

add the chicken thighs and cook for 1 minute constantly moving.

add 100 gm green beans cut into 1.5 cm chunks. cook for 30 seconds constantly moving.

add the rice and the sauce we made earlier. cook for 3-4 minutes constantly moving.

add the shrimp back and cook for 30 seconds constantly moving.

serve with a sprinkle of green onions, a sprinkle of cilantro and a fried egg on top.
