Soak dried chickpeas in water overnight.

Drain and add soaked chickpeas to a blender.

Add garlic to the blender.

Add parsley (stalks and leaves) to the blender.

Add dill (stalks and fronds) to the blender.

Add chili powder to the blender.

Add ground coriander to the blender.

Add ground cumin to the blender.

Add baking powder and bicarbonate soda to the blender.

Add salt to the blender.

Blend the mixture until chunky and coarse, not fully combined.

If the mixture is too wet, place it in a clean kitchen towel and ring it out to remove excess moisture.

Shape the mixture into desired shapes (balls, donuts, etc.).

Spray the shaped falafel with olive oil using a spray bottle.

Place the falafel in the air fryer.
