1

Welcome to the grilling experience; today we're cooking Argentine lamb.

2

The lamb is a 13 kg (approximately 28.6 lbs) whole lamb.

3

We will be cooking it vertically on a steel frame called an estaca.

4

Prepare the fire pit for grilling; we will be using flames instead of coals.

5

Place the lamb on the estaca with the rib side down, facing the flames.

6

Cook the lamb for approximately 3 hours on the rib side down.

7

Every 30 minutes, drizzle the lamb with brine to keep it moist and enhance flavor.

8

After 3 hours, turn the lamb over to cook the other side for about 45 minutes to 1 hour.

9

Monitor the skin for a golden color to indicate doneness.

10

After 4 hours total cooking time, remove the lamb from the estaca.
