Instructions

  1. 1Prepare the filling by mixing ground pork, finely chopped cabbage, grated carrots, chopped green onions, minced garlic, and grated ginger in a large bowl.
  2. 2Season the mixture with soy sauce, fish sauce, black pepper, salt, and a pinch of sugar. Mix until well combined.
  3. 3Lay an egg wrapper on a clean surface with a corner facing you.
  4. 4Place a spoonful of the filling near the corner closest to you, then fold the corner over the filling.
  5. 5Fold in the sides of the wrapper and roll tightly away from you to form an egg roll. Seal the edge with a little water.
  6. 6Repeat the process with the remaining wrappers and filling.
  7. 7Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  8. 8Carefully add the egg rolls to the hot oil, a few at a time, to avoid overcrowding.
  9. 9Fry the egg rolls until golden brown and crispy, about 4-5 minutes, turning occasionally for even cooking.
  10. 10Remove the egg rolls and drain on paper towels to absorb excess oil.

  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp oil
  • 1 package spring roll wrappers
  • 1 egg (for sealing, optional)
  • Oil for deep frying

Instructions

  1. 1In a large bowl, combine the mashed potatoes, mixed vegetables, curry powder, turmeric, cumin, salt, and black pepper. Mix well until all ingredients are combined.
  2. 2Heat 1 tablespoon of oil in a pan over medium heat. Add the potato mixture and cook for about 5 minutes, stirring occasionally. Remove from heat and let it cool.
  3. 3Take a spring roll wrapper and place it on a clean surface with one corner pointing towards you.
  4. 4Spoon about 2 tablespoons of the potato mixture onto the wrapper, about 1 inch from the bottom corner.
  5. 5Fold the bottom corner over the filling, then fold in the sides, and roll tightly to form a roll. Seal the edge with a little water or beaten egg if desired.
