Cut salmon fillets into cubes.
Heat butter and olive oil in a skillet over medium heat.
Add cubed salmon to the skillet and cook until pink on all ends, stirring occasionally.
Remove salmon from skillet and let it rest.
In the same skillet, add finely chopped garlic and cooking cream, stirring to combine.
Boil the cream until it thickens, being careful not to let it burn.
Season the sauce with salt and black pepper, and add lemon juice to taste.
Prepare a salad with baby romaine lettuce and watermelon.
