½ cup Tomato
1 Onion (diced)
1 Carrot (cut into juliennes)
1 cup Rice (cooked)
2 tsp Sweet Soy Sauce
¼ tsp Salt
1 tbsp Spring Onion Greens (chopped)
1 tsp Oil
4-5 Chicken Breast Strips
Salt (as required)
1 tbsp Sweet Soy Sauce
1 tsp Thai Red Chillies (chopped)
Prawn Crackers
1 tsp Oil
1 Egg
Fried Onions (for garnish)
Spring Onion Greens (for garnish)

Heat oil in a pan over medium heat.

Add diced onion and sauté until translucent.

Stir in chopped carrot and cook until slightly tender.

Add cooked rice and mix well with the vegetables.

Pour in soy sauce and sweet soy sauce; stir to combine.

Add chicken breast strips and cook until they are done.

Add chopped Thai red chillies and stir.

Push the mixture to one side and crack the egg into the pan; scramble until just set.
