Press the extra firm tofu between paper towels and two plates for 5 to 10 minutes to remove moisture.

Cut the pressed tofu into strips about 1/4 inch thick.

Remove the seeds from the cucumber using a spoon, then cut it into thin strips.

Cut the red bell pepper into strips, standing it upright and running a knife around the stem to avoid removing all the seeds.

Cut the avocado in half, slice it while still in the skin, and then remove the pit by pushing it out with your thumbs.

Pick a few leaves of Boston lettuce or living lettuce, which has the root still attached, for each spring roll.

Heat water in a shallow plate or pie plate in the microwave for about 60 seconds until warm but not too hot to touch.
