Preheat the Dutch oven with coals.
Place 1 potato in the Dutch oven and cover it with coals.
After about 30 minutes, check the potato with a skewer to see if it's done.
Cut the top of the potato open and squeeze it to fluff the insides.
Squeeze lime over the potato.
Add 3 tablespoons of Kerrygold butter to the potato.
Add optional ingredients like sauteed mushrooms and cooked steak on top of the potato.
Cover the Dutch oven and bake for an additional 6-7 minutes to heat the toppings.
Add triple cheddar cheese on top and cover again to melt the cheese for about 10 minutes.
Remove the potato from the Dutch oven and serve in a dish.
Top with sour cream, sliced scallions, and Montreal steak seasoning.
