Originating from the city of Mysore in Karnataka, Mysore Pak is a traditional Indian sweet made during festivals and special occasions. Its rich texture and flavor come from the generous use of ghee and sugar, making it a favorite among many. Over the years, it has gained popularity beyond Karnataka, with variations appearing across India and even internationally.

Coconut oil offers a healthier fat alternative.

Honey can reduce refined sugar content.
Heat 1 cup ghee in a pan over low heat until melted.
Add 2 cups gram flour to the pan and roast until fragrant, about 5-7 minutes.
In a separate pot, combine 1.5 cups sugar and 0.5 cups water; heat until sugar dissolves completely.
Pour the sugar syrup into the roasted gram flour gradually, stirring continuously.
Cook the mixture over low heat until it thickens and starts to leave the sides of the pan.
Add 1 teaspoon cardamom powder and mix well to incorporate.
Fold in 0.5 cup chopped cashews and 0.5 cup pistachios for added texture.
Transfer the mixture to a greased plate and spread evenly.
Allow to cool slightly before cutting into squares or diamonds.
Let it cool completely before serving.
