In a mixing bowl, combine 1 cup of milk and 2 teaspoons of sugar to activate the yeast.
Add 4 grams of dry yeast to the milk and sugar mixture, stir, and let it sit for 10-15 minutes until activated.
In a large bowl, mix 2 cups of all-purpose flour and 1/2 teaspoon of salt.
Add the activated yeast mixture and 1 egg to the flour and mix to form a soft dough.
Knead the dough until smooth, then spread 2 tablespoons of softened butter on top and mix until incorporated.
Grease the dough and cover it with plastic wrap, letting it rise in a warm place until doubled in size.
Prepare the filling by grinding 1 teaspoon each of black pepper, cumin seeds, and coriander seeds.
In a small pan, melt 2 tablespoons of butter and sauté 1 diced large onion until translucent.
Add 2 chopped carrots and 2 chopped bell peppers to the onions and cook until softened.
Mix in 250 grams of chicken and the ground spices, cooking until the chicken is done.
In a separate bowl, mix 1/2 cup of cold milk with 1 tablespoon of cornstarch to create a slurry, then add it to the filling and cook until thickened.
Once the filling is ready, divide the risen dough into 8 equal pieces and roll each piece into a flat circle.
Place the filling on the dough circle, add mozzarella cheese if desired, and roll it up, sealing the edges.
Place the rolls on a baking tray lined with butter paper and cover them to rest for proofing.
Preheat the oven to 250 degrees Celsius for 10-15 minutes.
Once proofed, brush the rolls with egg wash for color before baking.
Bake the rolls in the preheated oven for 10-12 minutes until golden brown and soft.
