Preheat the oven to 180 degrees Celsius.
Pierce the sausages to allow them to cook quickly and prevent bursting.
In a baking tray, add the pierced sausages, placing smoked bacon on top and unsmoked bacon below for identification.
Drizzle with olive oil and season with salt and pepper, mixing everything together until well combined.
Place the baking tray in the oven for about 20 to 25 minutes.
Prepare the vegetables: halve a large tomato and an onion, then season with salt, dried rosemary, and olive oil.
Add portobello mushrooms to the tray with the tomato and onion, which will be grilled later for about 10 minutes.
After 15 minutes of cooking, turn on the grill and place the tray under it to finish cooking.
Grate the potatoes and place them in a cheesecloth to squeeze out excess juice, using salt to help extract moisture.
Combine the squeezed potatoes with rosemary, freshly milled black pepper, and optional chili flakes, then add one tablespoon of corn starch and one egg to bind the mixture.
Mix everything together until well combined, then heat oil in a frying pan over medium heat.
Scoop a ladle of the hash brown mixture into the pan, forming a disc, and repeat to create more discs.
Fry the hash browns for about 3.5 to 4 minutes on each side until a crust forms.
For the eggs, heat more oil in a pan on low heat to make confit fried eggs, which gives a poached texture.
Cook the eggs for about 3.5 to 4 minutes, spooning hot oil over the top to ensure even cooking.
