Grate peeled agria potatoes using a box grater for two portions.
Add salt to the grated potatoes and mix well.
Place the salted potatoes into a tea towel and squeeze out the excess water in two batches.
Thinly slice half a large onion or one small onion and season it.
Spread half of the grated potato in a pan, creating a small rim, then add the seasoned onion in the center.
Press the remaining potato on top of the onion, shaping it nicely and spreading it out to form edges.
Cook the potato mixture on low heat without touching it, compressing the edges as it cooks.
Add a couple of knobs of butter to enrich the flavor of the cooking potato.
Place sausages in a pan on low heat to cook slowly without splitting.
Lightly oil a tray and place bacon on it to cook until crispy in the oven.
Drizzle olive oil on tomatoes, season with salt, pepper, and pink thyme, and place in a hot oven at 180°C for 5-6 minutes to blister them.
Remove sausages from the pan and place them on a tray to finish in the oven.
Cook black pudding in the same pan, allowing it to caramelize slowly.
Slice sourdough bread for serving and prepare two pieces of fried bread.
Check tomatoes after 5 minutes and flip the bacon halfway through cooking.
Flip black pudding to build a nice crust on the outside.
Pierce flat mushrooms all over to allow steam to escape during cooking, then roast them in butter with garlic and thyme.
Remove black pudding from the pan, keeping the oil for later use.
