Prepare a brine solution by adding water, chopped ginger, garlic, spring onions, chillies, and red onions to a pot and bring to a boil over medium heat for about 10 minutes.

Allow the brine solution to cool slightly, then add ice and water.

Score the mackerel with vertical slits on both sides and place it in the brine solution, ensuring it's completely covered. Add salt and stir until dissolved. Let it soak for 15-20 minutes.

Prepare the salad by thinly slicing cucumber, a small onion, two bell peppers, and tomatoes. Finely chop a few sprigs of parsley.

Transfer the vegetables to a container, add the juice of half a lemon, crushed white and black peppercorns, a pinch of salt, and chopped parsley. Mix well and set aside.

Remove the mackerel from the brine solution and coat the grill rack with groundnut oil.

Pour a small amount of water into the tray to keep the fish moist while grilling. Place the mackerels on the rack and sprinkle pink salt over the fish.

Preheat the oven to 200 degrees Celsius and grill the mackerel for 15 minutes on one side.

Prepare the tomato sauce by heating a pan over medium heat, adding a small amount of olive oil, and then adding two tablespoons of green seasoning blend and sliced onions. Let them caramelize slightly.

Add fresh chopped tomatoes, a teaspoon of all-purpose seasoning, scotch bonnet pepper, and a stock cube to the pan. Pour in a small amount of water and mix thoroughly. Cover and let cook for a few minutes until thickened.

After 15 minutes, carefully flip the fish and add salt. Grill for an additional 15 minutes.

Plate the attiéké on a banana leaf, add the grilled mackerel, salad, and tomato sauce, and serve with homemade red and green chili sauce.
