Cultural Context

Barfi, a beloved Indian sweet, traces its roots to ancient times, often prepared during festivals and celebrations. Its name derives from the Persian word 'barf', meaning snow, reflecting its soft, melt-in-the-mouth texture. 1

Heat a pan on low flame and add 250 grams sugar, spreading it evenly to caramelize.

2

Once the sugar starts melting, stir it gently to ensure all sugar melts completely.

3

Add 500 ml milk gradually to the caramelized sugar, stirring continuously as the sugar will clump together.

4

Once the milk boils, add a pinch of cardamom powder and 1/2 teaspoon vinegar to create a grainy texture.

5

Cook the mixture for an additional 1-2 minutes until it thickens and sets.

6

Remove the mixture from the heat and set it aside.

7

In another pan, heat 100 grams of ghee on low flame.

8

Add 500 grams of all-purpose flour to the ghee and roast it on low flame for about 10-15 minutes until it is well roasted and fragrant.

9

Once the flour is roasted, turn off the heat and add the prepared milk mixture to it, mixing thoroughly to avoid lumps.

10

Knead the mixture with your hands to ensure a smooth texture, about 10 minutes.

11

Transfer the mixture to a greased mold, pressing it down to set.

12

Top with chopped almonds and press them lightly into the mixture.

13

Cover and let it set for about 10 minutes before flipping it onto a serving dish.
