Besan Barfi

2 cups besan (gram flour)
1 cup sugar
1/2 cup ghee (clarified butter)
1/4 cup milk
1/2 tsp cardamom powder
1/4 cup chopped nuts (almonds, pistachios)
1/4 tsp saffron strands (optional)

Heat ghee in a heavy-bottomed pan over medium heat.

Add besan to the pan and roast it, stirring continuously until it turns golden brown and aromatic (about 10-15 minutes).

In a separate saucepan, combine sugar and milk. Heat until the sugar dissolves completely.

Once the besan is roasted, pour the sugar mixture into the pan with besan and mix well.

Add cardamom powder and saffron strands (if using) to the mixture and stir until well combined.

Continue to cook the mixture on low heat until it thickens and starts to leave the sides of the pan (about 5-7 minutes).

Remove the pan from heat and add chopped nuts, mixing them in thoroughly.

Grease a flat plate or tray with ghee and pour the mixture onto it, spreading it evenly.

Allow the mixture to cool for a few minutes, then cut it into squares or diamond shapes.

Let it cool completely before serving.
