Welcome to the channel. Today we will make rice kheer, a delicious dessert that is easy to prepare.

For the kheer, start with 1/3 cup of thick rice. These types of rice are best for making kheer.

Wash the rice 3 to 4 times thoroughly.

Soak the rice in water for 15 to 20 minutes.

While the rice is soaking, boil the milk. Pour 1 liter of milk into a pan and turn on the flame.

Prepare some dry fruits: chop 10 cashews, 10 pistachios, and 10 almonds finely. Use 18-20 raisins as well.

Once the milk is boiling, stir it gently to prevent it from overflowing. Keep a large spoon in the milk to help with this.

Add the soaked rice to the boiling milk. Stir immediately to prevent the rice from sticking to the pan.

Cook on low to medium flame until the rice is fully cooked and the milk thickens. Stir occasionally to mix the cream layer that forms on top into the milk.

After 10 to 15 minutes, the rice should be cooked and fluffy. Let it cook for another 7 minutes so that the rice and milk blend well together.

Once the kheer has thickened, add 3/4 cup of sugar. Adjust the sugar according to your taste.

Add the chopped dry fruits and mix well.

Add 1/4 cup of grated coconut. You can use crushed fresh coconut or small pieces of dried coconut.

Let the kheer cook for another 5 minutes to thicken further. It should be cooked on low to medium flame for about half an hour after adding the rice.

Turn off the gas after cooking. Let the kheer sit for 5 minutes to thicken more as it cools down.

After 5 minutes, the kheer will have thickened further. As it cools, it will thicken even more.

Once it reaches normal temperature, place the kheer in the fridge to chill.

Serve the kheer and enjoy it with family, especially during the month of Sawan.
