1 litre Full Cream Milk
1 1/2 cup Fox-nut (Makhane)
60 gm Basmati Rice
80 gm Sugar
15-20 threads Saffron, soaked in 1 tbsp of warm milk for 2 hrs
2 tbsp Raisins, washed with water
1 inch piece Coconut, sliced
20 Almonds, soaked in water, then peeled and chopped
20 Cashew Nuts, chopped
1/2 tsp Cardamom Powder

Add 1 litre of Full Cream Milk to a heavy bottom pan/pot.

Turn on the heat.

Crush the soaked Basmati Rice coarsely; it has been soaked for 1/2 hour in water and is now soft.

Once the milk has boiled, add the crushed rice to the milk.

Mix well and keep the heat low to prevent burning at the bottom, stirring often.

Wash 1 1/2 cups of Fox-nuts with water and add them to the milk, mixing well.

Turn the heat to medium until it boils once, then reduce to low again.

Cook the mixture, stirring frequently, until the rice is tender and the kheer becomes thicker and creamy, which takes about 45-50 minutes.

Once thickened, add the sliced coconut and press the rice with a ladle.

Add 1/2 tsp of Cardamom Powder, the soaked saffron, and the chopped dry fruits (Almonds, Cashews, and Raisins) to the kheer, mixing all ingredients well.

Turn off the heat and let it cool for 5 minutes before adding 80 gm of Sugar, adjusting to taste.

Transfer the kheer to a serving bowl.
