Lamb Potjie

Prepare all vegetables: clean and chop green beans, butternut, bell pepper, tomatoes, potatoes, carrots, green chilies, okra, and spring onions.

Heat 3/4 cup oil in a pot over an outdoor fire until hot.

Add green chilies and onions to the hot oil and sauté until fragrant.

Add curry leaves, thyme, and mint, and continue to sauté.

Stir in 1 tsp black pepper and let it fry nicely.

Add 2.5 tbsp mixed masala and sauté for a few minutes.

Incorporate ginger and garlic, cooking until fragrant.

Add the mutton and fry with the spices until browned.

Add chopped tomatoes and bell pepper, cooking for at least 15 minutes.

Add all prepared vegetables to the pot and mix well.

Cover and cook on low heat for at least 30 minutes, allowing flavors to meld and gravy to thicken.

Add spring onions for garnish before serving.

Serve hot with bread, rice, or roti.
