2 tbsp water (plus more if needed)
¼ tsp carom seeds
salt (as per taste)

Sieve the besan 2-3 times into a mixing bowl.

Beat water and oil using a hand whisk or blend them in a mixer, or add directly into the flour.

Add salt, carom seeds, hing, and black pepper powder to the flour mixture and mix well to form a dough.

Transfer the dough to a greased bowl and knead for 4-5 minutes.

Cover the dough and let it rest for 25-30 minutes.

Heat oil in a wide kadai for frying.

Divide the dough into 25 equal parts.

Take one part and roll it into a long log or sausage shape.

Place the log on the edge of a rolling board and stretch it to form a thin strip.

Drop a small ball of dough into the hot oil to check if it's ready.

Fry the strips in hot oil for 3-4 minutes or until done, flipping halfway through.

Repeat the process with the remaining dough and serve hot with jalebi and papaya sambhara.
