1

Hydrate the gelatin sheets by adding 12 grams of water for every 2 grams of gelatin.

2

Place frozen strawberries in a bowl and add sugar to create a strawberry concentrate.

3

Wrap the bowl and place it over a double boiler for about 1 hour to extract juice from the strawberries.

4

In a separate pot, add heavy cream and cut the vanilla bean in half, scraping the seeds into the cream and adding the pod as well.

5

Bring the cream mixture to a boil over medium heat.

6

Once the gelatin is hydrated, remove the extra water and add the gelatin to the cream mixture, stirring until melted.

7

Remove the vanilla bean pod and pour the cream mixture into a cup with buttermilk, pressing down to extract all vanilla seeds.

8

Blend the mixture with an immersion blender to ensure smoothness, removing any foam that forms.

9

Check the strawberry concentrate after 30 minutes to ensure it is releasing juice.

10

Prepare glasses for the panna cotta by tilting them and placing a non-skid mat or paper towel underneath.

11

Pour the panna cotta mixture into the prepared glasses and refrigerate for 5 to 6 hours until set.

12

Strain the strawberry concentrate using a chinois lined with paper towel or cheesecloth, allowing it to drip for about 30 minutes.

13

Soak gelatin in water, then microwave in 30-second intervals until melted without boiling.

14

Measure 500 grams of the strawberry juice and mix in the melted gelatin.

15

Cut fresh strawberries into quarters and place them on top of the set panna cotta.

16

Pour the clear strawberry jelly over the strawberries and chill for a couple of hours before serving.
