Chop Vegetables: Finely chop the celery, carrot, red onion, and garlic.
In a pan with hot olive oil, sauté the chopped vegetables until they become translucent. Transfer the cooked vegetables to a separate plate.
In the same pot, add 250g of chopped pork sausages. Fry the sausages well in a little olive oil until cooked through.
Pour red wine into the pot with sausages. Add the rosemary and thyme to infuse flavor into the mixture. Remove the rosemary and thyme after cooking.
Stir in 200 ml of tomato pulp into the pork and wine mixture.
Incorporate the sautéed vegetables into the pork mixture. Season the mixture with salt, black pepper, and pecorino cheese. Mix the ingredients well and let the ragu cook until it reaches a flavorful consistency.
In a separate pot, boil the Tagliatelle pasta until it's al dente.
Add a bit of pasta water to the ragu mixture, creating a smooth and rich sauce. Combine the boiled Tagliatelle with the ragu, ensuring the pasta is evenly coated.
Garnish the dish with fresh basil leaves. Grate Parmesan cheese on top for a finishing touch.
