1

Cut all the fins off the tilapia fish using kitchen scissors.

2

Clean the fish with lemon juice.

3

Slice the carrots after washing and peeling them.

4

Slice half of a red onion and half of a white onion.

5

Chop one scotch bonnet pepper and 2-3 cloves of garlic into tiny pieces.

6

Slice the whole yellow bell pepper and half each of the red and orange bell peppers.

7

Chop the cabbage using a knife, not a grater.

8

Dry the fish with a paper towel to remove excess water.

9

Pour vegetable oil into a bowl and add garlic salt, mixing until combined.

10

Add onion powder to the oil mixture and mix well.

11

Make incisions on the fish to help it absorb the seasoning.

12

Rub the seasoned oil all over the fish, ensuring to coat it well in the incisions.

13

Lay foil on the baking sheet for easy cleaning and spray non-stick spray on the baking rack.

14

Place the fish on the baking rack and bake it in a preheated oven at 350°F for 25 minutes.

15

In a pan, heat 5 tablespoons of oil and add chopped onions, frying until translucent.

16

Add chopped garlic and scotch bonnet pepper to the pan and stir.

17

Add sliced carrots to the pan and mix.

18

Add chopped bell peppers to the pan and stir.

19

Add chopped cabbage to the pan without adding water, cover, and cook for 5 minutes.

20

After 25 minutes, check the fish and rub more seasoned oil on it, flipping it over.

21

Bake the fish for an additional 15 minutes, checking on it periodically.

22

After 10-15 minutes, check the steamed cabbage and add thyme and garlic salt, mixing well.

23

Cover the cabbage and cook for an additional 10-15 minutes, ensuring it retains some crunch.

24

Once the fish is done, sprinkle more suya spice on top of the fish using a shifter.

25

Optionally, fry the fish instead of baking it, sprinkling suya spice on it immediately after frying.
