Rinse toor dal under cold water until water runs clear.

Cook toor dal with 3 cups water in a pressure cooker until soft, about 3-4 whistles.

Soak tamarind in 3/4 cup warm water for 10 minutes, then extract the pulp.

Stir in 1 sprig curry leaves, 1/2 tsp urad dal, and 2 dry red chilies, cooking until fragrant, about 30 seconds.

Add chopped big carrot and drumstick, sautéing for a few minutes.

Stir in the tamarind pulp and 2 and 1/2 tbsp sambar powder, cooking for 2 minutes.

Combine the cooked dal with the vegetable mixture, adding water for desired consistency.
