2 tbsp oil
1 tsp Mustard Seeds
1/2 tsp Fenugreek Seeds
2-3 dried red chilis
1-2 green chilis, finely chopped

1/2 tsp Asafoetida
1 sliced onion
2 Tomatoes, roughly chopped
1 carrot, roughly chopped
10-12 pieces of pumpkin
10-12 pieces of bottle gourd
8-10 pieces of drumsticks
1 tsp salt
1 tsp red chili powder
4-5 tbsp Tamarind water
4-5 cups water
1 piece of jaggery

Soak 1 cup of Toor Dal for half an hour to one hour.

In a pressure cooker, heat 2 tbsp oil and add 1 tsp mustard seeds, 1/2 tsp fenugreek seeds, 2-3 dried red chilis, 1-2 finely chopped green chilis, and some curry leaves.

Add 1/2 tsp asafoetida and mix.

Add 1 sliced onion and cook for 2-3 minutes until golden brown.

Add 2 roughly chopped tomatoes and cook for 2-3 minutes until soft.

Add 1 carrot, 10-12 pumpkin pieces, 10-12 pieces of bottle gourd, and 8-10 pieces of drumsticks, mixing well.

Add 1 tsp salt and 1 tsp red chili powder, and optionally some turmeric powder.

Add 2 tbsp sambar powder and mix, cooking for 1-2 minutes.

Add 4-5 tbsp tamarind water and mix, cooking for 1 more minute.

Add the soaked dal and 4-5 cups of water, mixing well.

Cover and cook for 2 whistles in the pressure cooker.

After cooking, mash the dal lightly with a wooden whisker.

Adjust water and salt as needed, then add onion bulbs and 1 piece of jaggery, mixing well.

Let the sambhar boil for 2-3 minutes until reaching desired consistency.

Garnish with fresh coriander before serving.
