Wash rice till water runs clear. Soak it for at least 30 mins.

In a pot on low to medium heat, add 2 tbsp ghee and julienned carrot pieces. Cook 2-3 mins. Set it aside and add raisins and one more tbsp of ghee. Cook till raisins puff up and set it all aside.

To the same pot, add 3 tbsp ghee. Add onions and cook till onions are translucent and slightly golden browned.

Add beef pieces and mix it well for around 5-6 mins till everything is nicely caramelized.

Add cumin powder and salt to taste. Mix for around 1-2 mins.

Add 3 cups water and mix it well. Transfer it to a pressure cooker. If you do not have a pressure cooker, with lid on cook till the beef pieces are tender.

Cook it in pressure cooker for around 25-30 mins. Cooking time varies and also depends on the type of beef used.

Once cooked, allow the pressure to release naturally before opening the lid. The beef will tenderize more during this process too.

Set aside the beef pieces and put the stock in a separate pot. Add 2 cups of water to stock or more according to the amount of rice you want to cook. Check if saltiness is accommodating to your taste and add the soaked rice.

On medium to high heat cook till most of the water is gone.

Add back the beef pieces and caramelized carrots and raisins on top. Lid on, cook on the lowest heat for around 10-15 mins till all the water is gone and rice is cooked through.
