Sprinkle flour into the skillet and stir for 1-2 minutes
Gradually add beef broth while stirring to avoid lumps
Return pork to the skillet and add thyme and bay leaves
Cover and simmer on low heat for 30-40 minutes until pork is tender
Meanwhile, boil potatoes in salted water until fork-tender, about 15-20 minutes
Drain potatoes and return to pot, adding butter and parsley
Mash potatoes until smooth and creamy
Remove pork from skillet and let rest for a few minutes
Stir in heavy cream and soy sauce to the gravy, simmer for 5 minutes
Slice pork and serve with mashed potatoes and gravy on the side.
