Tandoori Chicken Pizza

1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon sugar
1 chicken breast
tandoori masala
paprika
1/4 cup plain yogurt
1 teaspoon lemon juice

Add 1 cup lukewarm water, 1 teaspoon sugar, and 10 grams of instant yeast into a bowl and let sit for 5 minutes until yeast blooms.

Add all purpose flour and 1 teaspoon of salt to the yeast mixture and whisk until combined to form a shaggy dough.

Transfer the dough to a countertop and knead for around 2 minutes.

Return the dough to the bowl, add 1 tablespoon of cooking oil, and knead for another minute.

Form the dough into a ball and let it rest for 1 hour or until doubled in size, covered with a kitchen towel.

Blend roughly chopped tomatoes, onions, and 4 cloves of garlic until smooth.

In a pan over medium heat, add 2 tablespoons of cooking oil and the blended mixture, stirring in 1/2 teaspoon garlic powder, 1 tablespoon tomato paste, 1/2 teaspoon oregano, 1/2 teaspoon thyme, and 1/2 teaspoon basil.

Simmer the sauce for 5 minutes, then add 1/2 teaspoon sugar and adjust seasoning if necessary.

Cut 1 chicken breast into strips and place in a bowl.

Add tandoori masala, paprika, 1/4 cup plain yogurt, salt, and 1 teaspoon lemon juice to the chicken and massage to coat.

Marinate the chicken for at least 30 minutes or overnight.

In a pan over medium heat, add 2 tablespoons of cooking oil and the marinated chicken, cooking for 2-3 minutes until done.

Let the chicken rest for 5 minutes after cooking.

Grate mozzarella and cheddar cheese using a box grater.

Punch down the rested pizza dough to remove air pockets and knead for a minute.

Divide the dough in two and shape one portion into a smooth ball, letting it rest covered.

Roll out the dough into a circle roughly 10 inches in size.

Grease a 10-inch cast iron pan with cooking oil and transfer the rolled dough into it, spreading it to the edges.

Poke holes in the dough with a fork and let it rest for 5 minutes while preheating the oven to 225°C.

After 5 minutes, press the edges of the dough to form a crust.
