1 lb ground beef
1 cup cooked rice
1 medium onion
3 cloves garlic
1 cup tomato sauce
1 cup shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley
1 cup beef broth
1 cup corn
1 can black beans (15 oz)

Preheat the oven to 375°F.

Cut the tops off the bell peppers and remove the seeds.

Heat olive oil in a skillet over medium heat and sauté onion and garlic until translucent, about 3-4 minutes.

Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
