1 tablespoon sugar
1 tablespoon pickling spice

Prepare pickling juice by boiling 100 milliliters of water with half a tablespoon of kosher salt and one tablespoon of sugar for one minute.

Add pickling spices and two tablespoons of white vinegar to the boiled mixture and set aside to cool.

Slice two medium purple onions and place them in an 18-ounce jar.

Pour the cooled pickling juice over the onions and refrigerate for 24 hours.

Combine 2 pounds of lean beef and 200 grams of lamb fat in a large mixing bowl.

Add 2 tablespoons of olive oil to the meat mixture for preservation.

Run the ground beef through a meat grinder twice to combine with lamb fat.

Add spices (1.5 tablespoons kosher salt, 0.5 tablespoons black pepper, 0.5 tablespoons paprika, 0.5 teaspoons chili pepper) to the meat mixture.

Pour in 300 milliliters of sparkling water and knead the mixture for 30 minutes.

Cover the mixture with plastic wrap and refrigerate overnight.

Dice two medium onions finely and add them to the meat mixture before forming patties.

Form large patties on plastic wrap, ensuring they are even on all sides.

Preheat a grilling pan and add about a tablespoon of sunflower oil.

Transfer the patties from the plastic wrap to the grilling pan and cook until well done, testing for doneness by pressing the center.
