Preheat the oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat.
Sauté chopped onion until translucent, about 3-4 minutes.
Add ground meat and cook until browned, stirring occasionally, about 5-7 minutes.
Season with salt, pepper, and nutmeg, then mix in chopped parsley and remove from heat.
Lay one sheet of phyllo dough in a greased baking dish, brushing with melted butter.
Layer additional sheets, brushing each with butter, until half of the dough is used.
Spread the meat mixture evenly over the dough.
Cover with remaining phyllo sheets, brushing each with butter as before.
Tuck in the edges of the phyllo to seal the filling.
Score the top with a sharp knife to create serving portions.
Bake in the preheated oven until golden brown, about 30-35 minutes.
Let cool slightly before slicing and serving.
